A cardamom-flavored Asian pudding made with chickpea flour and coconut sugar. Gram flour creamy pudding is easy to make and deliciously sweet with a caramel flavor.

Ingredients

  • 2 cups gram flour
  • 4 cups of water
  • 2 cups of rice syrup
  • 1 cup of dried prunes
  • 1 cup of coconut sugar
  • 2 pods of crushed cardamom
  • Mint leaves for garnish

Instructions

  • 1)

In a medium pot, add the water, coconut sugar, crushed cardamom, and gram flour and mix until the mixture forms a smooth liquid.

  • 2)

Place the pot over medium heat and cook the mixture, stirring continuously until the mixture begins to thicken.

  • 3)

Add rice syrup and continue to stir until it thickens to a thick custard or pudding-like consistency.

  • 4)

Pour the pudding into serving cups and pour a thin layer of rice syrup over it.

  • 5)

Garnish with mint leaves and prunes, then allow to cool before serving.

Notes

You can add chopped almonds to increase the flavor.
