One of the main reasons for sharing this salad with you is, I like to keep the recipes I make different yet delicious, simple yet chic, and healthy, most importantly, extremely tasty. Everyone can make this and have fun with your kids at home just as couples. When we cook together, play together, eat together, we stay together. Keeping the family together, especially these days, is so vitally important.

The glue of togetherness is the “mmmm factor,” you make when you love the aroma and taste of the dish on your plate. Sometimes, we have no words to describe the sensational pleasure of the taste. We simply go “MMMMMM.” the longer you drag the “mmmm,” the better it tastes right .. hahaha. We all have experienced it at one time or another at home,  especially with our mothers, isn’t that true?  At a friend place, you have been invited to or even some excellent restaurants.

Zucchini is one of the best suited and my preferred choice of vegetable to make the spiral salad. It is soft to work with an easy handle and gives you long thin spirals ideal for spaghetti size, shape, and look. I love the green streek combination to the white inside. Next, best is orange squash or pumpkin that’s for next time it’s harder to work with.

This raw, fresh zucchini salad is like summer in a bowl. Mixed with tomatoes, okra and seasoned with tangy-sweet chat masala, cumin powder, black Himalayan salt, and black pepper, this salad is ideal for barbeques, picnics, or a simple snack to refresh you on a hot summer day.

In summers, I often ditch hot, spicy, and oily dishes for raw, fresh, and light on the palette recipes, and this zucchini salad is my go-to dish. During summers, zucchini is available in plentiful and at affordable rates at all farmer markets. Not only is zucchini inexpensive and packed with micronutrients, but it is also extremely versatile. You can saute them, add them to stirfries, as a topping on pizzas, or even make zucchini soup. Thus whenever I’m at the farmer’s market, I often pick them up by the dozen and make this quick and easy salad whenever the temperatures soar.
