Cashew Ice Cream

  • Prep time: 30 minutes
  • Cook time: 15 minutes
  • Total time: 45 minutes

Ingredients

  • 1 cup cashew nuts soaked in water
  • 1 tbsp lemon juice
  • 1/2 cup rice or maple syrup

Instructions

  • 1)

    Soak cashew nuts in water for 2 hours.

  • 2)

    Place all ingredients in a blender and blend until smooth.

  • 3)

    Make scoops the size you prefer and freeze for 2-3 hours.

  • 4)

    Remove from the freezer one hour before you serve chill.

  • 5)

    Serve it with a slice of lemon and rice syrup or any syrup of choice.
