Carob Blueberry Pancake

If you’re looking for a healthier alternative to chocolate, the good news is that you can replace chocolate with another plant-based alternative – carob. It tastes very similar to chocolate and can be used in cooking, baking, and hot drinks. For example, during one of my treatments for a patient diagnosed with terminal leukemia, I made these natural pancakes to have a special healthy dessert to cheer her up and put her in a lighter mood.

Made with the deliciousness and flavors of carob and blueberry, these pancakes can be a delight to eat on any occasion.

Ingredients

Sauce

  • 2 tbsp of agar-agar
  • 1 cup of water to melt agar agar
  • 3 tbsp carob powder
  • 2 tbsp ginger juice
  • 1 cup of coconut milk
  • 1 cup of rice syrup
  • 2 cups of blueberries
  • 1 cup blueberry for garnish
  • 1/2 cup of coconut sugar
  • Juice of a half lemon

Instructions

For the sauce

  • 1)

    In a medium pot, add 1 cup of water and bring to a boil.

  • 2)

    Add the agar-agar to the hot water and stir until completely dissolved.

  • 3)

    Add the carob powder and ginger juice to 1/2 cup of water in a separate bowl and mix until the liquid is smooth and homogeneous. Add the carob liquid to the hot water-agar agar mixture and stir continuously until the mixture thickens.

  • 4)

    Add the blueberries to the liquid and stir in.

  • 5)

    Set the pancakes on each plate and top with the carob and berry sauce.

  • 6)

    Sprinkle coconut sugar and a few drops of lemon juice and serve.
